Sending Milk; The Northeast Farms and Farmers of the Cabot Creamery Cooperative

Sending Milk; The Northeast Farms and Farmers of the Cabot Creamery

Each morning before the sun rises, 365 days a year, the dairy farmers who bind our communities are at work. It's hard, often thankless work, with little financial incentive but a long and deeply proud history that stretches generations. Their farms display a harmonious balance between land, machine, animal and farmer and their passion and ingenuity are what keep them successful. These are the lives captured in Sending Milk, a collection of arresting black and white photographs of the dairy farms of the northeast. Skye Chalmers, a Vermont native, has brought his keenly honed eye and deep love of the land to this project and created a work of documentary photography at its finest. Sending Milk captures all aspects of dairy life - the families, the cows, the fields and barns, the equipment, the stunningly sublime and the hardships. An introduction by award-winning Vermont author, educator, and journalist Stephen Kiernan is the only text in this volume. The images speak for themselves. Skye Chalmers has been photographing New England for two decades. His photographs have appeared in The New York Times, Boston Globe, Yankee Magazine, Maine Magazine, Men's Journal, National Geographic Traveler, Snowboarder Magazine, Skiing, and dozens more. His books of photographs include Vermont Dogs and ZAZA, a study of Barbara Kauffman and her sculptures. Chalmers makes his home in Weston, Vermont, with his wife and two children.

Cabot Vintage Choice Cheddar (8 ounce)

As it was early last century, Cabot is still a sleepy little farm town tucked into the rocky soil of Northern Vermont's rolling hills. Located there is the Cabot Creamery, a dairy cooperative dedicated to creating world-class cheddars while supporting the hard-pressed independent farmers who supply their milk. Established as a cooperative in 1919, the dairy farmers actually own the company! Cabot's best cheddar is called "Vintage Choice." Each block of Vintage Choice is hand-selected by Cabot's president. Aged undisturbed for 18 to 24 months, limited edition Vintage Choice is complex, opulent and full of nuances. After this long aging period, it takes on a full-bodied, rich, extra-sharp flavor. Cabot's finest cheddar has a texture that is more compact and a bit drier than authentic English Cheddar - different, not better or worse. Cabot Vintage Choice, set apart from other Cabot cheddars by its deep purple wax, is a wonderful product we wholeheartedly recommend. Please compare it to one of our fine English Cheddars and decide your own preference.Suitable for Vegetarians.Awarded 3rd Place in the American Cheese Society 2007 Awards in the Mature Cheddar category.

In 2003, Cabot Creamery asked Jasper Hill Farm to age a special batch of English-style clothbound cheddar. This was the beginning of a revolutionary partnership. Cabot Clothbound is a handsome natural-rinded traditional cheddar. Bandaged with muslin and skillfully aged a minimum of 10 months at the Cellars at Jasper Hill. Cabot Clothbound has all the characteristic texture of an English-style cheddar with the sweet caramel and milky flavors that sets it apart from other bandaged cheddars. The flavor profile is at once sweet, savory, nutty, and tangy.Cabot Creamery was one of the first family farm cooperatives in Vermont, and today they are widely known for making exceptional American-style block Cheddar. Kempton Family Farm in Peacham, VT has been selected as the sole source for Clothbound, and Cabot crafts this cheese the old-world way - one vat at a time.Once unmolded from their shaping hoops, the infant wheels are individually wrapped with muslin and brushed with lard before they undergo a ten to fourteen month maturation period. The extra care involved in curing a clothbound cheese requires a customized aging environment, with proper temperature, humidity, and airflow. The cheddar vaults at the Cellars at Jasper Hill are majestic and awe-inspiring - Cabot Clothbound is truly a monumental undertaking. A team of affineurs practice a constant cycle of care for Clothbound and the 34 pound wheels are tested, tasted, and monitored for quality during their entire life cycle. .Made from pasteurized cow's milk.Photo depicts 9 lb. quarter-form of cheese. We cut and wrap this item by hand.
